Jaggery is often called Cane Sugar. It is a dark, coarse, unrefined sugar made from the sap of a variety of palm tree or from the sugar cane juice. It has a sweet, rich and fudgey caramel flavour and complements anything you would use normal sugar for. Natco Jaggery Goor comes isn a solid cakelike block and is used for the making of Indian sweets, or when crushed can be sprinkled on cakes and used in tea or coffee just like ordinary sugar. The availability of jaggery depends on the success of the palm crop season and is therefore often difficult to obtain. However, it keeps for ages and a little goes a long way. Try it as a flavourful alternative to ordinary sugar in your coffee - it adds a real taste of distiction.
Bay Leaves have a mild and sweet taste. Use bay leaves to flavour pilaus, biryanis, meat curries, pasta sauces, casseroles and stews
Bay leaves are grown in the Mediterranean region and are mainly used in soups, stews, meat and vegetable dishes. The leaves also flavour classic French dishes such as bouillabaisse and bouillon. Bay leaves are pungent and have a sharp, bitter taste. In ancient times, the leaf was symbol of honour, health and good fortune. Bay leaves can be added for a more pungent flavour in bean, split pea and vegetable soups, meat stews, spaghetti sauce and chilli. Be sure to remove bay leaves before eating a dish that has finished cooking.

Ground Ginger is used extensively in Indian and Oriental cuisines. A convenient alternative to fresh ginger and an essential ingredient for preparing pastes and marinades.
Fresh ginger is essential to Asian and oriental cookery. It is used in pickles, chutneys and curry pastes and the ground dried root is a constituent of many curry powders. Tender young ginger can be sliced and eaten as a salad. Sometimes the roots will produce green sprouts which can be finely chopped and added to a green salad. In the West, dried ginger is mainly used in cakes and biscuits, especially ginger snaps and gingerbread. Ginger is also used in puddings, jams, preserves and in some drinks like ginger beer, ginger wine and tea. Pickled ginger is a delicious accompaniment to satays and a colourful garnish to many Chinese dishes. Preserved ginger is eaten as a confection, chopped up for cakes and puddings, and is sometimes used as an ice cream ingredient.
