Whole black peppers are the dried berry fruit containing a single seed. The dried fruit flesh gives the wrinkled apearance typical of black peppercorns. Pepper gets its heat from the piperine compound found in the fruit skins and the seed itself. The skin also contains important flavour compounds which give black pepper its distictive citrus and woody notes. White pepper has the fruit and skin removed which determines the difference in flavour between black and white pepper.

The fresh tender green leaves of the fenugreek plant, called Methi have a bitter-sweet flavour and are widely consumed as a regular green vegetable in Indian cooking. Shana Methi is chopped and may be used immediately from frozen, making them a tidy and convenient way of enjoying the vegetable at its best.
Hot oil 180°C/350°F For best results always cook from frozen. Remove all packaging. Deep Fry in preheated oil for 8 - 10 minutes until crispy and golden brown. Drain well before serving.
