The low-growing bush basil (Ocimum minimum) is a separate species, but it is probably a variant of sweet basil. Much of the herb grown today is a hybrid, a cross between Ocimum basilicum andOcimum americanum. There are many cultivars of basil that have their own denomination.
Tukmaria and sabza are another name for basil seeds. Tukmaria has a very mild flavour (rather like poppy seeds) and is generally used in light desserts thanks to its gelatinous properties when it's soaked and swells in water
Both Black and White Pepper are obtained from the small dried berry of the vine Piper Nigrum. White pepper is simply the berry with the outer skin removed which gives a slightly milder and delicate flavour than black pepper. Ground white pepper is made from ground whole white peppers.
Use in light coloured or cream sauces and stews to add flavour without the black speckles of black pepper.

Tandoori masala is used for tandoori cooking. Tandoor ovens are traditional Indian clay ovens used to cook meats and vegetables in a kind of barbecue. The tandoori masala is mixed with yoghurt and the meat is coated with the mix and left to marinate before cooking in the tandoor oven.
An essential ingredient in curry and masala mixtures. Strongly aromatic, spicy and slightly bitter in taste.
Cumin has a distinctive, slightly bitter yet warm flavour. Replace every 6 months or so.
