To crack open the coconut shell. Hold the coconut in the palm of the hand with your hand facing upwards, make sure there is a bowl underneath to catch the coconut water. Hit the coconut with the back of a large knife several times all around the centre, rotating it a few times, until it cracks into two halves revealing the milky white flesh. Catch the coconut water in the bowl as it drains - save this for cooking or for a pleasantly refreshing drink
