Black cardamom is now a staple in African, Indian and Middle Eastern cooking. Gor Keri is a sweet mango pickle where raw mangoes are chopped and combined with sugar, jaggery and spices and then sundried. It goes well along with Theplas, Bhakris, Mathris, Khakras or just plain Roti.
Sago is extracted from the sago cycad by cutting the pith from the stem, root and seeds of the cycads, grinding the pith to a coarse flour, before being dried, pounded, and soaked.
