Natco Urid (or Urad) beans split and dehusked to produce a small pale yellow split pea (dal). This dal has many uses and is popular in North and South Indian cuisine. Great for creamy dals and soups and also used to prepare dumplings. If fried in oil, this dal will turn red and acquire a nutty flavour.
Niru Sooji (Semolina) - A coarsely ground grain made from wheat, semolina (or sooji) makes regular appearances in pastas, couscous and bread, as well as in breakfast cereals, such as Cream of Wheat.
Although this sticky rice is perfect with Oriental food, it is also ideal with all savoury dishes and makes an excellent rice pudding. Cold cooked Fragrant Jasmine is wonderful to use as fried rice – the lightly sticky grains separate when re-heated.
Made from peeled, dried, green mangoes. Used as souring agent, in marinades and as a tenderiser. Best used towards the end of cooking.
