A popular vegetable in India, this tiny gourd can now be found in Indian markets in California and elsewhere. Here it is always sold green, looking very much like a tiny cucumber, but in India it is also sometimes used in it's scarlet red mature stage.
The wide use of Dudhi in numerous dishes may be partly attributed to its nutritional value as well as its versatility. Shana Dudhi may be used immediately from frozen, making them a tidy and convenient way of enjoying the vegetable at its best.
Also known as mut, mot, mat, papillon, haricot or dew bean, the moth bean is very small and brownish in color, with a creamy yellow colored interior. Similar in taste to the mung bean, but with a nuttier flavour, these tiny beans are simmered with other vegetables for a staple curry in North India.
